The Rebujito is Andalucia’s popular refreshing cocktail

The Rebujito is said to have been invented sometime on a hot day in the 90s (1990s), when someone tossed together a Manzanilla or Fino sherry from Jerez with a chilled lemon-lime soda (7Up or Sprite?). Or it might have its origins in Victorian England, when Sherry Cobblers were a summer hit made of Jerez sherry, soda, a teaspoon of sugar, and an orange peel. Actually, that sounds really good. Today’s version of the Rebujito uses fresh mint sprigs to garnish the frosty cocktail.

During Sevilla’s Feria de Abril, the Rebujito represents happiness. You can find it everywhere, in bars and in private homes or in the casetas of the Feria. It’s served by the glass or by the pitcher, and either way, it’s the typical Sevilla drink that will leave you refreshed and ready for all the festivities!


Recipe:

Ingredients: 1 part Manzanilla or Fino sherry, 2 parts chilled lemon-lime soft drink (7Up or Sprite) or tonic, fresh mint sprigs for garnish

Main alcohol: Manzanilla or Fino sherry

Preparation: Stir into glass over ice, garnish and serve.

Served: Cold, without ice

Standard garnish: Fresh mint sprig

Drinkware: Large bowl wine glass
